What's In Store

Well even though we are only getting to the end of November, I'm already dipping into to what's stored in the freezer. Mashed potato on the left, frozen flat in portion size so it stacks easily and parsley pesto cubes (I usually pop these out of the tray once frozen and keep them in a freezer bag). I've also got some coriander and rocket pesto frozen in cubes as well.
Checking on the Charlotte potatoes in the cellar, I notice some are getting a bit soft, so I think it's going to be a marathon mashing and freezing session later this evening.
Meantime if this snotty weather we are having would only let up maybe I could get out, tidy up the veg plot and harvest some Brussels.
Mashed potato in the freezer? Does that really work??? This could be life-changing ;)

----Works a treat.roughly mash the potatoes with a minimum of milk (I use skim as we are both keen to reduce fat). When defrosted as a bit more milk, mash to a smoother consistency and reheat in the microwave! Easy!

What a brilliant idea, freezing mashed potatoes. I shall do that when my as-yet-unplanted-crop grow to maturity next year. Thanks for the tip.
---Another advantage is that it is so easy,just make an extra load or two and freeze that.

What a great idea to store the potatoes mashed in the freezer and the same goes for the ice cube parley pesto! Now why didn't I think of that?

Hi John,
I've always avoided freezing potatoes, particularly in soups and stews because they become completely yucky, but mashed? Have never tried. perhaps I'll give it a go...
---Do try it Sue. I've never had a problem with the mash. Didn't know it was a problem with soups. So you wouldn't advise freezing say leek and potato soup?
