I like the way they turn green!


A lot of people have this complaint about this variety of bean, and as far as I know no one has come up with a good alternative.

If it's a bean salad you are after, why not use dry beans along with the wax/green beans? I don't know about blue, but there are lots of different colored dry beans. I make a salad this way sometimes with a oil/vinegar based dressing, and let it sit over night in the fridge so the beans soak up some of the dressing.

This is sometimes called three (or four) bean salad, and you could probably find some recipes on the Internet.

Hmmm ... I've yet to find any purple bean that keeps its colour after cooking. The nearest I've been able to get to it is the variety "Kew Blue", whose pods are very thin and fine when young so if you give them just a very light steaming they may retain some colour, which is better than nothing. I'll stick some seeds in with the package I'm about to send off to you ...
